Week Night Quick Pasta

I bought some heirloom tomatoes from the Farmer’s Market this week and I have no explanation as to why.  I guess it was the colors, but I’m not a big fan of tomatoes.  Well, I decided to make a quick dish.  I wanted to make a tomato bread, but I didn’t feel like going to the store to purchase french bread and mozzarella, so I made this

I made this pasta with the ingredients I had at home.  I used the following:

Heirloom tomatoes

Fresh Basil

Juice of 2 Lemons

1 Teaspoon red pepper flakes

2 cloves of garlic minced

2 Tablespoons butter

Salt and pepper to taste

1 package of Spaghetti pasta

parmesan cheese

This was so quick and simple and delicious. 

Cook pasta according to package directions and drain.

I melted the butter in large skillet, then added the garlic and lemon juice.  After about a minute I added the tomatoes and tossed constantly. After about 5 minutes, I tossed in pasta, red pepper flakes, salt & pepper. Cook for about another 5 minutes.  Serve with cheese on top.
